- 3 white mushrooms (finely chopped)
- 2 Tbsp. celery (finely chopped)
- 1/2 cup cannellini beans (cooked, packaged or cooked fresh)
- 1/2 cup farro (cooked)
- 1/2 cup breadcrumbs (vegan, + ¼ cup for rolling)
- 2 eggs (flax, 2 tablespoons ground flax seed whisked with 6 tablespoons water, refrigerate for ten minutes or more to thicken)
- 2 Tbsp. fresh parsley (chopped, +1 tablespoon)
- 2 Tbsp. fresh basil (chopped, +1 tablespoon)
- 1/4 tsp. fennel seeds (ground, don't buy if you don't have already, optional)
- 1/4 tsp. salt
- 1/4 tsp. ground black pepper

- 2 cups spinach
- 1 qt. vegetable broth (or more if needed)
