- 7 cups chicken broth (or a combination, according to how broth-y you like your soup)

- 2 stalks celery (chopped)
- 14.5 oz. diced tomatoes (with basil and garlic)
- 1 1/2 tsp. balsamic vinegar
- 3 Tbsp. fresh parsley (chopped, or 1 tablespoon dried)
- 2 tsp. italian seasonings
- 8 oz. orzo (already cooked, or other small pasta)
- 6 oz. fresh spinach (swiss chard kale or escarole, chopped)

Fantastic flavors and easy to make. I did substitute ground turkey for chicken and it was fine.

Have always wanted to try this soup so I decided to make a batch and I'm so happy I did because Everyone Raved about it!! I added 2 cups of shredded zucchini in with my meatballs(beef), swapped quinoa for the orzo, and also used a frozen chopped spinach. All my friends want the recipe!! Thanks for the amazing soup....it's now one of my favorite!
