- 1/2 cup Parmigiano Reggiano (grated)
- 1/3 cup seasoned bread crumbs (Italian)
- 1/4 tsp. salt
- 2 Tbsp. olive oil
- 1 yellow onion (medium, diced)
- 2 large carrots (diced)
- 2 stalks celery (diced)
- 6 cups chicken broth (high-quality, such as Swanson, do not use low-sodium)
- 2 cups beef broth (high-quality, such as Swanson, do not use low-sodium)
- 2 cups water
- 1/2 cup dry white wine (optional)
- 1 bay leaf
- 1/2 tsp. salt
- 1/4 tsp. white pepper (okay to use black pepper)
- 1 cup small pasta (such as dittalini)
- 4 oz. fresh spinach (stems trimmed and roughly chopped, once prepped, you should have about 3 packed cups)
- Parmigiano Reggiano (for serving)

I love this recipe so much! It took awhile to find a recipe with spicy Italian sausage. I was substituting it for a bit, but this recipe is much better. I love how fresh and warm this dish is.

Italian Wedding Soup is my absolute favorite soup and this recipe doesn't disappoint! First off, this is the best meatball I've ever had...no exaggerating. Amazing. I did make a few adjustments to the broth however, just to my liking, nothing wrong with it originally, I just have a thing for broths. I doubled the broth & water measurements (I like my soup brothy) and added a few cloves of garlic to the initial trinity. It is clean, simple and so good. This is now my new go-to soup recipe.
