- English cucumber (sliced lengthwise and cut into half moons)

- cherry tomatoes (cut in half)
- scallions (green onions - use white and green - sliced)
- peperoncini (we left them whole)
- roasted sunflower seeds
- pecorino cheese (Shaved, q.b. quanto basta - as much as you like)
- 3/4 cup fresh lemon juice
- 2/3 cup white balsamic vinegar
- 1 cup fresh basil leaves (packed)
- 1/3 cup Dijon mustard
- 1 1/2 cups extra-virgin olive oil
- 1 1/2 tsp. kosher salt
- 1 Tbsp. black pepper
- 1 1/2 tsp. garlic powder
