- 2 Tbsp. extra virgin olive oil (EVOO)
- 2 cloves garlic (finely chopped)

- grated nutmeg (Freshly, to taste)
- 1 cup sheep (fresh, or cows milk ricotta)
- 1/2 cup parmigiano reggiano cheese (freshly grated, a couple of handfuls)
- 2 Tbsp. chopped fresh thyme
- salted butter (Good quality, melted)
- 8 slices white bread (hand-cut, good quality, sliced 1/2-inch thick)
- 8 provolone cheese (deli slices)
- 8 mozzarella cheese (deli slices Wisconsin)
