- 15 oz. diced tomatoes ( , I used fire-roasted)
- 1 Tbsp. italian seasoning
- 1 tsp. crushed red pepper flakes ( , or more to taste)
- 16 oz. gnocchi
- 2 handfuls baby spinach (fresh, or roughly-chopped kale)
- finely chopped fresh parsley (optional)
- grated Parmesan cheese (optional)

I make this and freeze it for 20+ people every time I’m assigned a dinner on a long river trip.
I always add an extra 1/2 pkg of gnocchi (minis work best) to each batch + a bit of cream at the end, and I do 1/2 hot Italian for spicy lovers! So delicious and filling.
