- 1 lb. white beans (dried, soaked overnight or at least 8 hours)
- 2 stalks celery (cut into pieces)
- 4 cloves garlic
- 3 sage leaves (plus 10 more for Crockpot)
- 1/2 tsp. fennel (ground, optional, but good)
- 1 can (14.5 oz.) diced tomatoes
- 1/2 cup water (rinse out tomato can and deglaze frying pan)

it was yucky, not good. My family and i thought it was gross. we couldnt eat much

I made this per instructions and I was disappointed that not all the beans cooked. The taste was fine but there wasn't enough water in the first cook. I used my multi cooker so the time wasn't the issue. The directions state just cover the beans with water. I would suggest that you cover the beans with 2-4 inches of water. You are pouring the extra out later anyway except the the 1/2 cup you reserve. I will air on the side of caution next time and add a lot more water.

I used ground Italian sausage instead of links, browned with celery, garlic and added some onion. After browning added the seasonings and the rest of the ingredients, (used canned beans) then crocked it. Everyone loved it!

Delicious! I used diced tomatoes with Chiles and it gave it a great kick. Also browned the sausage in theIP vs a separate skillet.

Excellent. I was concerned I only had chicken Chorizo sausage and that layering the Spanish flavour with Italian would conflict, but not at all. Delicious, we served to company with accolades all around. I did use canned beans due to time restraints and availability and I simmered the rinsed canned beans with the celery, sage salt and Italian seasoning to meld the flavours better. This worked very well for flavouring, The only drawback was the beans seemed a bit over cooked so will try and use dried ones next time to compare.

Fennel can be a bit of a love hate flavour and it unfortunately didn’t agree with everyone in my family

Great recipe. I used fresh shell beans that i had recently dried out. Excellent the first day and even better as leftovers. (add a bit of water when you heat up on the stove)
