Made this with chicken stock and added a rib of chopped celery and some portobello mushrooms that needed to be used up. Delicious! Served with a piece of focaccia and was a full meal. Froze leftovers and hoping it reheats well.

Made this soup but halved the onion. Family loved it. Crushed red pepper in this makes it.
