Italian Sausage Soup with Tortellini

Description

This soup can be easily frozen. If freezing, don't add tortellini until the soup is thawed.

  • 1 lb. Italian sausage
  • 1 cup chopped onions
  • 1 tsp. chopped garlic
  • 6 cups of beef broth
  • 1/2 cup of water
  • 1/2 cup dry red wine
  • 1 14.5 oz. can of diced tomatoes
  • 1/2 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • 1 8 oz. can tomato sauce
  • 3 Tbsps. fresh parsly
  • 16 ozs. frozen meat or cheese filled tortellini
  • Parmesan cheese

    Directions

    1. Remove sausage from casing. Brown the sausage in a large pot. Remove the sausage, leaving 1 Tbsp. of the drippings in the pot.
    2. Saute the onions and garlic in the drippings until the onions are tender.
    3. Add the beef broth, water, wine, tomatoes, basil, oregano, tomato sauce, sausage, and parsley. Bring to a boil.
    4. Reduce heat and simmer uncovered, for 30 minutes.
    5. Top with cheese and serve.
