- 2 1/2 cups pasta sauce (divided, use a meatless variety of your favorite brand)
- 1/4 tsp. garlic powder
- 1/4 tsp. dried oregano
- 1/2 cup shredded mozzarella cheese
- 1/4 cup panko breadcrumbs
- 2 Tbsp. fresh grated Parmesan cheese
- 12 oz. spaghetti (cooked to package directions for al-dente)
- 2 Tbsp. salt (for the pasta water)
- 1 tsp. fresh chopped parsley (optional)
