- 20 oz. baby bella mushrooms (or white button, sliced ⅛" thick)
- 5 cups kale (packed chopped, or spinach, kale pictured)
- white wine (Splash of, optional)
- 4 large eggs
- 2 1/2 cups milk (I used whole)
- 1 lb. bread (loaf of olive, or another sturdy bread, cut into about ¾" cubes)
- 2 Tbsp. chopped fresh herbs (I used thyme and sage; parsley, rosemary, and basil would all work well)
- 1 fontina cheese (generous cup grated)
- 1/2 cup crumbled blue cheese
