- 4 portobello mushrooms (large)
- 4 cups kale (Earthbound Farm Organic, Italia Mix, or mix of baby kale, baby arugula, mizuna and radicchio)
- 2 cups spring onion (chopped, about 3 onions)
- broth (veggie, to sauté with, or you can use oil if you use it)
- Himalayan pink salt (to taste)
- pesto (Kale Arugula Radicchio)
- balsamic drizzle (Maple Miso)
