- 1/2 cup cake flour (all purpose)
- 3.4 oz. instant vanilla pudding mix
- 4 large eggs
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 Tbsp. pure vanilla extract
- 3 Tbsp. rum extract (or to taste, if you don’t like rum, don’t add this much!)
- 1 flaked coconut (loose cup)
- 1/2 cup chopped pecans
- 16 oz. cream cheese (softened)
- 2 sticks butter (real, softened)
- 2 tsp. vanilla
- 1 tsp. coconut extract
- 1 tsp. rum extract (optional)
- 2 lb. confectioners’ sugar (sifted, must be sifted)
- 2 Tbsp. heavy whipping cream (as needed)
- 1/2 cup sweetened flaked coconut (soft, for garnish, optional)
- 1/2 cup chopped pecans (for garnish, optional)
