- 2 Tbsp. olive oil
- 1 1/2 lb. skinless boneless chicken breasts (cut into thin strips)
- 1/4 tsp. salt
- 1/8 tsp. pepper
- oregano
- 2 Tbsp. fresh basil (snipped)
- 10 oz. fresh spinach
- 1 cup shredded mozzarella cheese (4 oz.)

Directions
- In a 12-inch skillet, heat oil over medium-high heat. Add chicken, half at a time. Cook and stir until no longer pink.
- Drain off fat. Return all chicken to skillet. Sprinkle chicken with salt and pepper.
- Add drained tomatoes and basil to skillet. Bring to boiling.
- Add spinach to skillet, HALF at a time, tossing just until wilted.
- Remove from heat. Sprinkle with cheese and let stand for 3 to 5 minutes or until cheese is melted.
