Description
The classic chicken casserole gets an Italian makeover when fresh herbs and tomato sauce meet boneless skinless chicken breasts.
Ingredients

- 1 cup Tyson® Frozen Boneless Skinless Chicken Breasts (Tyson®, cubed)
- 1 cup elbow macaroni
- 2 Tbsp. olive oil
- 2/3 onion (diced)
- 1 clove garlic (minced)
- 1 can diced tomatoes (14.5 oz.)
- 1 1/4 cups mozzarella cheese (shredded)
- 1/4 cup parsley (fresh, chopped)
- 1 kosher salt (to taste)
- 1/4 tsp. ground black pepper
- 1/4 cup bread crumbs
- 1/3 cup Parmesan cheese (grated)
- 3 Tbsp. butter (divided)

Directions
- Preheat oven to 400°F. Coat 8x8x2 inch baking dish with 1 tablespoon butter.
- Bring medium sized pot of lightly salted water to a boil over high heat. Once boiling, add pasta and follow pasta instructions. When tender, drain pasta and set aside.
- Meanwhile, place olive oil in a medium sauté pan over medium heat. Add chicken and cook for 3 minutes. Add onions and garlic, stirring to combine, and cook until the onions are soft and the chicken is cooked through, about 5 minutes.
- Combine chicken mixture with the cooked pasta in large bowl. Add canned tomatoes with juice, mozzarella cheese, parsley, salt and pepper. Mix gently until all ingredients are evenly distributed. Place mixture in prepared baking dish.
- In a small bowl mix together bread crumbs and Parmesan cheese. Sprinkle on top of pasta. Dot the top with slices of butter. Bake until top is gold brown, about 30 minutes.

Really hit the spot. I had marinated chicken in balsamic dressing, so chopped that up and seared it with the onion & garlic. Used a mix of fresh Mozz & shredded. Replaced fresh basil for the parsley. salt & peppered along the way. My kids and their friends devoured it. It wasn't dry at all. After reading the comments that is was dry, I saved some pasta water just in case, but the juices from the chicken, tomatoes and fresh mozz was just enough. The pasta soaked it all up and it tasted great. The tomatoes added a sweet/tartness to the savory chicken and pasta plus the fresh basil added a nice brightness. Served with toasted sliced rolls & simple salad. I will add this to my rotation & good for pasta parties!

Not bad. Kinda dry. We warmed it up with some heavy cream the next day and it was better. Probably won’t make again.

I had used some chicken that was already cooked in the crock pot in some diced tomatoes and enchilada sauce. I feel that gave the meat a little kick along with the other spices listed in the recipe of course. This was delicious and my family loved it. We will definitely be making this again :)

A little better than average. Need to season the chicken - salt, pepper, basil, Italian seasoning, etc. I added half a jar of marinara sauce, & used more mozzarella cheese. Not sure it needs the fresh parsley (could have used dried). It had mixed reviews from my family. I wouldn’t bother making again.

I seasoned the chicken really well. Added spaghetti sauce instead and it turned out wonderfully!

Doubled recipe because I thought it wouldn't be enough for four people. We had about half left over, who knew! Added pizza sauce, Italian seasoning, and used Italian bread crumbs based on previous reviews of this being bland. I'm not sure this will be in the rotation, but it was nice to try something different.

I added pink sauce to the dish the first time to help it not be dry (as read from other reviews). The dish was delicious and we will very likely make it again.

This was very meh to my family. I added seasoning to the chicken and used green Chile tomatoes but it just didn’t have enough flavor.

This turned out to be very filling and delicious. I doubled the recipe for growing boys and added more chicken.

i added my own twist with flavorful peppers and left the parsley out. dice my own tomatoes and onions. and added shrimp... used egg noodles and made brussle sprout for the veggies...

It was good. A little dry when using diced tomatoes. Based off the reviews I added Italian seasoning which helped. Easy to make!

Taste was good, rich flavor. Presentation though was not the best but that could have been the cooks...lol. Enjoyed our first Yummly meal creation!

Both kids really liked it! I improvised a bit. Instead of diced tomatoes, which aren’t popular in my house, I used about 1 1/2 cups of pasta sauce and rather than salt & pepper, I used Italian seasoning. I’ll definitely make it again!
