- 1 1/3 cups unsalted butter (at room temperature)
- 1 1/3 cups all-purpose flour
- 1 1/3 cups sugar
- 1 tsp. vanilla extract
- 3 large eggs
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- cream (Filling and Decorating)
- 6 Tbsp. raspberry (fresh preserves, or mixed berry preserves works great!)
- 16 oz. Fresh berries (I use blackberries, strawberries and raspberries)
- 2 mascarpone (small tubs of, 2- 8 oz tubs of mascarpone, 16 ounces total taken out of the refrigerator 1 hour before using to soften.)
- 8 oz. sour cream
- 1/2 cup honey (or more to taste if your like your cream more sweet)
- 1 Tbsp. vanilla extract
