- 2 1/2 lb. rump roast (trimmed of fat and cut into 1-inch pieces)
- 1/3 cup all purpose flour

- 4 cups low sodium beef broth
- 1 Tbsp. red wine vinegar
- 30 oz. diced tomatoes
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 3/4 tsp. dried rosemary (crushed)

- 2 bay leaves
- 1 1/2 lb. russet potatoes (peeled and diced into 1-inch pieces)
- 8 oz. cremini mushroom (sliced)

This was a winner! Had with salad and butter bread (gluten-free). Used stew meat. Very tender! Definitely a repeat!

This dish was a hit and will be included on my menu rotation. Many ingredients called for and prep time was anything but minimal. That said, the complex resultant flavor was superb. My only adjustment was to add wine.

Great recipe!
Made it for a dinner party with friends, got good reviews.
Tweeked the recipe a bit. I did not get celery in my grocery order so I cut the carrots in big chunks and used them. I added 3T of tomato paste and about 1/2 cup of red wine, also put in some parsnip with the potatoes.

Excellent. The ingredients and timing were perfect. It made for a nice thick warming winter stew. The kids liked it too!

Very good! Had 1.5 lbs of beef so adjusted amounts of ingredients (1 can tomatoes instead of 2, 3 carrots insread of 4 etc.). I chopped potatoes and carrots into large chunks to avoid them getting mushy which yielded the perfect degree of tender. Sauted carrots, onions, and celery in skillet then transferred to pot. Browned the beef in same skillet then added 1 cup of beef broth and when mostly cooked i added to pot along with the rest of the ingredients. I cooked in a large dutch oven but couldn't get the heat low enough to stop bubbling so left a sliver of an opening in the lid which did the trick. Originally set it to cook for 3 hours but it was perfect at 2. Ate with rustic bread and YUM!!
