- 2 pork spareribs (slabs)
- 4 cloves garlic (crushed)
- salt
- pepper
- 1/2 cup fresh mint (chopped)
- 1/4 cup olive oil
- 1/4 cup red wine vinegar
- pickled jalapeno peppers (optional)

Directions
- Rub spareribs all over with garlic; salt and pepper generously and spread mint evenly over all rib surfaces. Place ribs in a shallow pan; drizzle with oil and vinegar, cover and refrigerate overnight.
- Place ribs over drip pan over indirect heat or meadium low; close grill hood and grill for 1 1/2 hours, until ribs are tender. Serve with pickled peppers, if desired.
