- 2 cups granulated sugar
- 2.63 oz. unsweetened cocoa powder
- 1 1/2 tsp. baking powder
- 1 1/2 tsp. baking soda
- 1 tsp. kosher salt
- 2 large eggs
- 1 cup whole milk
- 1/2 cup flavored oil (neutral, such as light olive, canola, vegetable, etc.)
- 2 tsp. pure vanilla extract
- 3/4 cup coffee (hot)
- 1/4 cup whiskey (look for non-smoky flavor profile whiskey)
- 1 1/2 tsp. instant espresso granules (optional)
- 2 Tbsp. Irish whiskey (the same as you used in the cupcakes)
- 1 1/2 cups heavy cream (cold,)
- 1 1/2 Tbsp. dark brown sugar (packed, or more to taste)
- crumbs (cupcake topping, see *Note)
- 2 oz. semisweet chocolate (block, about 1-inch thick, at room temperature)
- 2 oz. white chocolate (block, about 1-inch thick, at room temperature)
