- 225 grams soft brown sugar (use granulated if that's all you have)
- 230 grams flour (plain, all purpose)
- 1 1/2 sticks butter
- 1 tsp. bicarbonate of soda (Baking Soda)
- 1 tsp. mixed spice (pumpkin spice will do nicely)
- 2 beaten eggs (large)
- 1 handful chopped nuts (to top, Optional)
