- 1 1/4 lb. beef stew meat (well-marbled chuck, cut into 1 1/2-inch chunks)
- 3 tsp. salt (more to taste)
- 1/4 cup olive oil
- 6 large garlic cloves (minced)
- 4 cups beef stock (or broth)
- 2 cups water
- 1 cup guinness (extra stout)
- 1 cup red wine (hearty)
- 2 Tbsp. tomato paste
- 1 Tbsp. sugar
- 1 Tbsp. dried thyme
- 1 Tbsp. worcestershire sauce
- 2 bay leaves
- 2 Tbsp. butter
- 3 lb. russet potatoes (peeled, cut into 1/2-inch pieces, about 7 cups)
- 1 onion (large, chopped, 1 1/2 to 2 cups)
- 2 cups carrots (pieces peeled, and/or parsnips, 3 to 4 carrots or parsnips)
- 1/2 tsp. freshly ground black pepper
- 2 Tbsp. fresh parsley (chopped)

It turned out great. I changed it a little by using poultry seasoning instead of Tyne and I omitted the beer.

Excellent. Good even on a week night. Always a plus when you have a bit of Guinness and wine left over for the actual dinner

The family loves it. Followed Stephanie’s advice. Dredged the beef, eliminated the wine & added cream. I cut the chuck roast into nice 1”x1” (ish) chunks (instead of buying pre-cut stew meat). Nobody likes using a knife in their stew ;-)

This is outrageously good. Excellent with some no knead Dutch oven bread slathered with Kerrygold butter and a glass of red wine. I watch sales for beef so I can make this on the cheap. My mom said this was the best beef stew she ever had!

Amazing beef stew. Followed Stephanie's recommendations on no wine and adding some flour and it turned out great.

So, it was a little light on seasoning and you need to season every step. The basics are good, but i would add fresh herbs and delete the sugar.

It was good and the family liked it. Only thing we didn’t like was the taste of the red wine. Guinness added great flavor; wine, not so much. I will leave out the wine next time. I also added flour to the meat, reduced the water to one cup and added a tablespoon of flour to the water, and added about a half cup of half and half at the end before serving.

I dredged my beef in flour, eliminated the water, used golden potatoes and thickened with a flour slurry. Man was this good! Brought me back to my childhood in County Galway!! A repeat for sure! My family loved it

Really amazing:) and I loved the taste. I used Irish butter to cook the onions and carrot. And used Yukon gold potatoes instead off r russet potatoes. Other then that this recipe is awesome:)

This was excellent. Like other reviewers, I dredged my meat in seasoned flour and eliminated the water and sugar. I also used fresh thyme and bay leaf, made my own beef stock and used 2 lbs of meat. I’ve tried other beef stews and this was by far the best, can’t wait to have my leftovers!

Very nice too much potato and very little meat. Play around with the ratio to suit your taste. Slow cooker? Reduce the amount of water.

I have made this several times; it's one of mine & my husband's favorites. Of course I've made a few tweeks (2x Guinness, 3x Worcestershire...) to the recipe to better suit our tastes, but the original stew is also good as is.

Have made this a couple times now and my friends really like it. They kept going back for more. Great for -40 wind-chill outside as a bonus.

This is a delicious hearty stew. It needed a tad little more flavor (maybe more garlic or onion). I would skip the sugar step. It was a tad too sweet but overall delicious.
