- 1 sweet potato (large, grated)
- 1 Granny Smith apple (grated)
- 1 yellow onion (large, finely chopped)
- 1 tsp. allspice berries (ground)
- 1/2 tsp. nutmeg (freshly grated)
- 25 grams gingerbread (hard, crushed)
- 1 egg
- 1 tsp. salt
- 500 grams mushrooms (your choice sliced)
- 20 grams butter
- 3 garlic cloves
- 2 Tbsp. cognac (optional)
- 12 sausages (good quality British, your choice I used buffalo and venison, but pork or beef also work)
- 6 eggs (poached, cooked no longer than 3 minutes)
- 3 rhubarb stalks (cut in 2cm long pieces and poached for two minutes)
- 3 tsp. pepper (rose)
- 1 handful pea shoots (or other greens/salad)
