- 1 oz. wild mushrooms (dried, or two 1/2 ounce packages)
- 0.5 oz. fresh thyme (package, divided)
- 1 Tbsp. olive oil
- 1 Tbsp. unsalted butter
- 1 shallot (large, peeled and minced)
- 1 clove garlic (peeled and minced)
- 1 cup arborio rice
- 1/3 cup dry sherry (you can also use white wine, but steer clear of cooking wine)
- 15 oz. beef broth (you can use chicken broth as well)
- 1 tsp. sauce (Kitchen Bouquet gravy browning, which just gives the risotto a deeper richer color., optional)
- 1/2 cup Parmesan (grated good quality, plus more for garnish)
- salt
- cracked black pepper
- 2 cups cremini mushrooms (sliced)
- 1 Tbsp. unsalted butter
- truffle oil (optional: a final drizzle of)
