Nothing beats my roasted chicken, but this is definitely a keeper when pressed for time...just pop it in and leave it!

Needed more seasoning for the size bird I had. It didn’t really have as much lemon flavor as I thought it might. I would recommend more lemons. Overall, very moist meat and the gravy from the left over liquid was awesome

This turned out really well. So tender and flavorful. Ad-libbed just a little using what was on hand. Lime and cilantro in place of lemon and thyme. Tacos tomorrow with the leftovers! Will definitely make again.
