- 1 tsp. Garam Masala
- 1/4 tsp. red chili powder (or adjust to taste)
- 1/2 tsp. turmeric powder
- 3/4 tsp. salt (adjust to taste)
- 1/2 cup water (4 oz)
- 1 cup coconut milk (8 oz, use full fat or lite from a can)
- 1/2 tsp. sugar
- 1 large potato (175 grams, cut into 1-inch pieces)
- 1 cup cauliflower florets (large, 130 grams)
- 2 medium carrots (110 grams, cut into rounds)
- 1/4 cup frozen green peas (soaked in warm water for 5 minutes)
- 1 pinch cardamom powder
- 1/2 lemon (juice of)
- 2 Tbsp. chopped cilantro (for garnishing, optional)
