    This was really delicious and flavourful!! I modified the recipe slightly by adding a few extra veggies (needed to clear out fridge), cilantro, a bit more quinoa, and using 2 cups chicken broth instead of the water. I also didn't have black beans so served it with refried beans instead, alongwith shredded lettuce, avocado, a lime wedge, and shredded cheese. Will definitely make this again, so easy!

    This is really yummy! Super easy, too. It's going to be one of those things I take "just one more little bite" of as I'm packing up leftovers. Served with avocado and lime wedges.

    this recipe was great, I didnt have onion or peppers, so i substituted sauteed eggplant. cooked it on high pressure for 2 minutes and let it NPR for 15 minutes. it turned out perfectly! Very tasty, next time i will sautee the onions and peppers to put on top once cooked.
