So easy and delicious! This was my first recipe with an Instant Pot and it was a huge success. This is an easy one to put together even after work. Very filling.

This recipe was delicious and it’s low carb! I added about a tablespoon of diced Chipotle peppers in Adobe sauce for an extra layer of flavor. It balanced out really well with the sweetness of the sweet potato.
