Delicious! I have an immersion blender. So, made a few changes to make it easier.
1. After cooking time, I used the immersion blender until smooth.
2. Made the roux but rather than add the soup to it, I did the reverse. I continued to run the immersion while I added the roux, then the parm and cream.
3. I didn't have enough 1/2 and 1/2. So used whole milk to make up the difference.
4. Spice wise, I always season at every layer (s+p). So, on the veggies while sauteing, in the soup before cooking. In the roux. And I feel it still needed more S+P, but that's my taste. Oh, and I also used almost the entire can of Tomato paste as I wanted it more tomato-y.
This is a keeper. We are big TJ's Tomato Basil soup people, and I was so happy to find a recipe that was fresher, cleaner and very delicious. Home made.

We've made this one several times now, and it's a hit every time. I was never a tomato soup fan until this one.
