- 1/2 cup chicken broth (warm, or reserved broth from shredded pork)

- 1 tsp. kosher salt
- 4 Tbsp. coconut oil (melted)
- 3/4 cup salsa verde (bottled or homemade, easy homemade Tomatillo Salsa Verde included in the recipe – make it ahead of time if using)
- 3/4 cup refried beans (canned or homemade)
- pepper jack
- cheese (quesadilla, cut into matchsticks (16 – 18 sticks))
- Mexican crema
- sour cream
- greek yogurt
- salsa (Tomatillo Avocado, (see recipe below) or favorite store-bought salsa)
- Cotija cheese (crumbled)
- salsa (Tomatillo Avocado, optional, could substitute with your favorite salsa)
- 1/2 lb. tomatillos (husked, rinsed, and chopped)
- 1 avocado (chopped)
- 2 Tbsp. diced onion
- 2 Tbsp. chopped cilantro
- 1 jalapeno (membrane and seeds removed, minced)
- 1 lime (juice of)
- 1/2 tsp. kosher salt (more to taste)
- 1 lb. tomatillos (husk removed and rinsed to remove the sticky residue, and halved)
- 2 jalapeños
- 1 poblano
- 1 small onion (quartered)
- 4 cloves garlic
- 2 tsp. cumin
- 1 tsp. coriander
- 1 tsp. salt
- 1 lime (juice of)
- 1 bunch cilantro
