I made this recipe for a party of 12. (Just a note…I upped the number of proportions letting the computer calculate the ingredients needs, and we had a LOT left over despite some people having two portions!) Nothing but rave reviews. My wife, who is not a huge fan of Spanish Rice, loved this dish so much that has been looking for an excuse to make it again, so she created another party, six this time, and we are serving it again today. The first time I did not add jalapeños, but this time I am adding some sweet pickled halapenos, which we make. I’ll let you know in a follow up how that works! One more note…instead of an instaPot, I sautéed the onions and red pepper in a pan, then added them and all of the other ingredients to a crock pot and cooked on high for 7 hours. Came out soft and delicious.

I like the bell pepper additions and it’s just quick and easy. Family loved it.

Bland. I even made a few adjustments and there was no flavor. Super disappointed.

Really tasty! I added some green olives and skipped the jalapeno. Also, topped it with some sauted veggies while serving.

Easy recipe. I added chipotle pepper and chicken sausage. Everyone loved it.

I made this twice and the first time followed everything and the 2nd time I added more peppers both red and green and it was great!

I used salsa instead of the tomato purée and I think it wasn’t flavorful enough so I put it back on the stove for a few minutes with more salsa and beans and it was delicious! I used brown rice and it came out perfect!

Made it with brown rice bc it’s all I had. I also used sofrito in place of the tomato paste. Added some smoked hot sauce. The flavor is great. Too much water though. Will also add bay leaf next time.
