- 4 slices bacon (thick-cut, cut crosswise into short strips)
- 2 lb. sirloin tip roast (Pork, trimmed and cut into cubes 1 – 1 1/2 inch square)
- 2 tsp. olive oil (if needed)
- 1 onion (chopped small)
- 1 poblano chile (large, chopped small, sometimes called Pasilla chiles in U.S. grocery stores)
- 1 Tbsp. ground cumin
- 1 tsp. oregano (preferably Mexican oregano)
- 4 oz. diced green chiles
- juice
- 3 cups chicken stock (or canned chicken broth)
- 2 sweet potatoes (medium-sized, peeled and cut into 3/4 inch cubes)
- 1 red bell pepper (large, cut into 3/4 inch pieces)
- 1 Tbsp. lime juice (or more, I use my fresh-frozen lime juice)
- 3 Tbsp. chopped cilantro (finely, optional)
