Description
This family-style BBQ pulled pork is full of flavor, perfectly tender and a breeze to prep. Perfect for weeknight dinners or anytime you're craving pulled pork but are short on time, Instant Pot® pulled pork comes together in just over an hour — and has the same delicious taste and fork-tender texture as slow-cooked versions (like our Slow Cooker BBQ Pulled Pork). After the pork is done cooking, you'll simply shred it, toss back into the pressure cooker to coat with the sweet and tangy BBQ sauce, and serve! Pile high onto rolls or buns with coleslaw and pickles, and enjoy with a side of roasted vegetables or Pasta Salad for a refreshing, satisfying meal. We love Instant Pot® pork recipes like this one as they can feed a crowd and also make great leftovers! Whip up an easy, budget-friendly meal like pulled pork quesadillas, Pork Tacos or nachos, or add to a salad or grain bowl for a quick lunch.
Ingredients
- 1 pkg. pork seasoning (slow cookers bbq pulled)
- 1/2 cup tomato ketchup (French’s®)
- 1/2 cup firmly packed brown sugar
- 1/3 cup cider vinegar
- 1 Tbsp. oil
- 3 lb. boneless pork shoulder roast (trimmed and cut into 2 pieces)
- 1/3 cup water
Directions
- Mix Seasoning Mix, ketchup, brown sugar and vinegar in bowl until blended; set aside.
- Heat oil in Instant Pot on SAUTÉ function. Place pork in pot. Cook 5 minutes or until lightly browned, turning once. Add water. Pour in sauce mixture. Close lid. Set Valve to Seal.
- Set to cook for 60 minutes on MEAT/STEW function or until pork pulls apart easily. When done, quick release the pressure. Open the lid once pressure inside the pot is completely released. (Check manufacturer’s manual for safe operating instructions.)
- Remove pork and place in bowl. Shred pork, using 2 forks. Return pork to Instant Pot. Mix with sauce before serving. Serve on sandwich or slider rolls, if desired.
