- 1 lb. beef (finger meat, chuck meat, or brisket)
- 3/4 lb. feet (beef, or beef tendon, optional)
- 1,120 grams onions (peeled and halved)
- 2 Tbsp. ginger (28g, unpeeled & cut long strips)
- 3.9 grams garlic cloves (crushed)
- 2 Tbsp. vegetable oil (or peanut oil)
- 7 cups cold water
- 3 Tbsp. fish sauce (45ml)
- 20 grams yellow rock sugar (or substitute with 1 tbsp + 1 tsp sugar)
- 1/2 tsp. table salt (fine, may need to add more to taste)

- beef meatballs (Vietnamese, Thịt bò viên, optional)
- 4 cloves (0.5g)
- 9 grams star anise
- 5.7 grams cinnamon stick
- 1 tsp. coriander seeds

- 1 g cardamom pods (black, optional)
- 180 grams banh pho rice noodles (medium, flat, soaked in lightly salted hot water for 20 - 28 minutes, 60g - 80g per person)
- 1/2 white onion (small, thinly sliced)
- fresh cilantro (finely chopped)
- 2 stalks green onions (finely chopped)
- freshly ground black pepper (A touch)
- 40 grams bean sprouts (per person)
- 1 lime (cut into 8 wedges)
- mint (optional)
- jalapeno (optional)
- thai basil (optional)
- hoisin sauce (optional)
