- 1 lb. ground turkey (90% to 93% lean ground beef, or ground bison, I used 90% lean ground sirloin)
- 1 small yellow onion (diced)
- 1 1/2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1 Tbsp. dried oregano
- 3 Tbsp. chili powder
- 2 Tbsp. smoked paprika
- 2 tsp. ground cumin
- 1 tsp. garlic powder
- 1 tsp. ground cinnamon
- 1/2 tsp. cayenne pepper (1/4- ,use more if you prefer your chili on the spicier side)
- 1 sweet potato (large, cut into 1/2-inch chunks)
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 1 head cauliflower (stemmed and finely chopped)
- 1 can pumpkin purée (15 ounces)
- 1 can fire roasted diced tomatoes (15 ounces)
- 3 cups low sodium chicken broth (2- ,or vegetable broth or water)
- jalapeño (sliced)

We didn’t have bell peppers, so I substituted okra but my family still liked this because of all the seasonings. It came out a little watery so I added 1/2 T cornstarch.

For my first time making chili, this was foolproof and delicious! I used all ingredients to a T (except coconut oil) and it tasted exactly as I envisioned it...hearty with perfect holiday flavors. The immediate results seem a little liquidy in the Instant Pot, but it doesn’t affect the taste or leftovers at all.
