- 1 lb. boneless, skinless chicken thighs (cut into strips)
- 1 lb. chorizo sausage (sliced into little discs)
- 1 lb. shrimp (fresh or frozen, uncooked, deveined, and skin/shell on or off depending on how you like it)
- 1 lb. scallops (fresh or frozen, uncooked)
- 1 Spanish onion (large, chopped)
- 1/4 cup vegetable oil
- 2 Tbsp. salted butter
- 1 Tbsp. crushed garlic
- 1 green bell pepper
- 1 red bell pepper
- 1 lemon (zested)
- 14.5 oz. stewed tomatoes (can of, drained)
- 1 pinch saffron (a few strands of)
- 1 tsp. turmeric
- 2 cups valencia rice (or, 12 oz package, just make sure you use a short grain rice)
- 3 1/2 cups chicken broth (I used 3.5 cups of water + 1 tbsp of Chicken Better Than Bouillon)
- 1/2 cup dry white wine (drinking or cooking wine is fine)
- 1 cup frozen peas
- 3 dashes pepper (and salt if you wish but I didn’t use any)
- parsley flakes (Dried, for topping, optional)

awesome recipe, easy to follow. as with everything in life though there were substitutions abd speed bumbs. no shrimp double scallops, no boneless thighs so less chicken than i thought, and lost the knob that closes the pressure part so used finger.
added a big of cajun seasoning but was a huge hit. ill definitely make ut again and will guarentee it will taste different but awesome everytime.

This recipe is terrific! Just adjust the amount of liquid to have a less soupy paella but the taste is on point
