- 1 cup butternut squash (peeled & cubed)
- 1/2 tsp. dried thyme (fresh or ½ teaspoon)
- 4 cloves garlic (minced)
- 1 1/2 Tbsp. tomato paste
- 1/2 cup red wine
- 2 cups beef stock (/broth)
- 1/2 cup chickpeas (dried & soaked)
- 1/2 cup dried apricots (sliced)
- 1 cardamom pod (cinnamon stick, & star anise)
- 2 cloves
- 1 bay leaf
- chopped pistachios (optional)
- parsley (for garnish, optional)
- avocado oil (or olive oil)
- kosher salt
- pepper (fresh)
- 1/2 cup Greek-style yogurt
- 1/2 lemon (Zest & juice o)
- 1 clove garlic (finely grated)
- 1 tsp. fresh parsley chopped
- 1/4 tsp. kosher salt (& a crack of pepper)
- 1 Tbsp. pomegranate molasses
- 1 1/2 tsp. smoked paprika (each, & cumin)
- 1 tsp. ground coriander (& turmeric powder)
- 1/2 tsp. canela (& cayenne pepper)
- 1/4 tsp. ground cloves
