- 1 lb. chicken sausage (al fresco all natural Spicy Jalapeno)
- 1 yellow onion (large, chopped)
- 4 cloves garlic (minced)
- 1 red bell pepper (large, cored and diced)
- 2 jalapeños (cored, seeds removed and minced)
- 15 oz. petite diced tomatoes (canned, drained, 1 can)
- 1 cup chicken stock
- 1 1/4 cups dry quinoa
- 2 tsp. chili powder (ground)
- 2 tsp. smoked paprika (sweet not hot)
- 1 tsp. cumin
- 1 tsp. dried oregano
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. red pepper flakes (optional)
- 15 oz. canned black beans (rinsed and drained, 1 can, I used organic)
- 1 cup chopped cilantro (freshly)
- 1 Tbsp. lime juice (fresh squeezed, 1/2 lime)
