- 2 tsp. extra virgin olive oil
- 1 lb. ground chicken (93% lean, or turkey)
- 1 small yellow onion (diced)
- 1 tsp. kosher salt
- 1 cup long grain brown rice (uncooked)
- 1 red bell pepper (large, cut into wide strips, about 3/4 inch, halved if long)
- 1 green bell pepper (large, cut into wide strips, about 3/4 inch, halved if long)
- 15 oz. low sodium black beans (drained and rinsed)
- 15 oz. fire roasted diced tomatoes (in their juices)
- 1 cup corn kernels (fresh, frozen and thawed, or drained from a can)
- 2 cups salsa (your favorite, 1, 16-ounce jar; I used a chunky medium salsa)
- 2 Tbsp. chili powder
- 1 Tbsp. ground cumin
- 1 tsp. garlic powder
- 1 cup mexican blend cheese (shredded, divided)
- sour cream
- chopped fresh cilantro
- avocado
- green onion

This was the second meal thing that I made with my instant pot, we all loved it. I used the fire roasted canned corn and ground turkey. Because it was so dense I served it on bed of shredded cabbage, lightly seasoned. I will definitely make this again

Using ground venison burger. Love instant pot recipes like this for weeknight meals. To save time on weeknights, I prepped this ahead of time by measuring out the dry ingredients and putting them in little Tupperware containers. I drained and rinsed the beans and stored them as well. That way I can just dump, dump it in quickly and add the fresh stuff when we have this for supper. Topped w guacamole, plain Greek yogurt (ie sour cream), and crunched tortilla chips this great.
Note: the IP burn error message came up on this (probably bc so thick), so I added approx 1 c water to the mixture). Also, a lot of the rice came out still hard following these instructions, so I put it on the auto rice mode to soften (about 12 min) afterwards. Update: this recipe is kind of a pain at this point. Multiple burn warnings despite adding the extra water :( If I make it again, I’ll add 1.5-2 cups of water and then reduce the whole mixture in a pan or in the IP sauté function if it’s too watery.
