- 1 lb. beef (ground sirloin, 85%-90% lean – the less lean, the better)
- 1/2 lb. ground pork
- 1/2 lb. ground veal
- 1/2 yellow onion (grated, a cheese grater works great)
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 3 Tbsp. crushed garlic
- 1 Tbsp. seasoned salt
- 2 tsp. black pepper
- 2 tsp. dried oregano
- 2 Tbsp. dried parsley
- 1/2 cup whole milk
- 2 Tbsp. ketchup
- 2 Tbsp. barbecue sauce
- 2 eggs (slightly beaten)
- 1/2 cup ketchup
- 1/4 cup barbecue sauce
- 1 Tbsp. yellow mustard
- 1 Tbsp. honey
- 1 Tbsp. balsamic glaze
- 1 tsp. Worcestershire sauce
- 2 Tbsp. brown sugar (either light or dark is fine)
- 1 1/2 lb. yukon gold potatoes (baby white, rinsed, skin-on and quartered)
- 1 1/2 lb. baby red potatoes (rinsed, skin-on and quartered)
- 5 cloves garlic
- 1 1/2 cups chicken broth (I used 1.5 tsp of Chicken Better Than Bouillon + 1.5 cups of water. NOTE: Use 2 cups if using an 8qt due to volume)
- 4 Tbsp. salted butter
- 1/2 cup heavy cream (or half & half)
- 5.2 oz. Boursin cheese (in deli/fancy cheese section of most markets or you can use 4 oz/half a brick of cream cheese or 4 oz of sour cream instead)
- 1 tsp. kosher salt
- 1 tsp. black pepper
- 1 tsp. garlic powder
- 1/2 tsp. Italian seasoning
- 1/4 cup chives (sliced)
