- 4 bone-in chicken thighs (fat trimmed if desired)
- 2 tsp. italian seasoning

- 1 cup low sodium chicken broth
- 4 oz. cream cheese
- 1 Tbsp. seasoning (Better Than Bouillon Chicken)
- 3/4 cup milk (I used unsweetened almond milk.)
- 2 Tbsp. heavy whipping cream
- 1/4 cup sundried tomatoes
- 1/4 cup parmesan reggiano cheese (grated)
- 3 garlic cloves (minced)
- 2 1/2 cups fresh spinach
- 1 Tbsp. cornstarch (or xanthan gum Xanthan gum is keto. Use 1 teaspoon. See notes for instructions.)
- 1 Tbsp. water

Delicious! I used bone-in thighs but next time I think I’ll go for a boneless option

Wonderful recipe! I will consider adding mushrooms or kalamata olives. I also used half and half and a whole bag of spinach. All over pasta.

Easy to make. I added marinated artichoke hearts and adjusted the milk/cream ratio to 1/2 c each. A little more thickener was needed to get the consistency I like, but it was really good.

Delicious!
I made enough for leftovers not realizing that the garlic would get stronger overnight. Now I can't rid of my garlic breath (which isn't necessarily a bad thing)!

This is so good!! My husband loved it! We had some friends over with a 1 and 3 year old..I made some pasta with it for them and they loved it too!! I usually make it with stir fry cauliflower rice from Trader Joes. Made 2xs in 1 week and making again today.

Yum! A bit salty but I think low sodium chicken broth would help with that.
Attempt #2: I used 4 tablespoons of cornstarch to thicken the sauce and served over pasta. This worked well with compliments from dinner guests.
