- 1 Tbsp. Greek seasoning (Check ingredients for Gluten-Free)
- 2 Tbsp. extra virgin olive oil
- 1/4 cup chicken stock
- 1/2 tsp. oregano ( Greek)
- 1/2 tsp. fresh ground black pepper
- 3 cucumbers (medium, chopped)
- 1 cup cherry tomatoes (chopped)
- 1/4 cup Kalamata olives (chopped, or black olives)
- 1/4 cup red onion (finely chopped)
- 4 oz. crumbled feta cheese (about 1/2 cup)
- 1/4 cup Italian dressing (your choice, I like Newman’s Own Original Olive Oil and Vinegar Dressing, which has only 2 carbs in 1/4 cup.)
