You can scale this up beautifully using a full 16oz bag of dried brown lentils and a whole Trader Joe’s container of sweet potato strips. Just up the spices and veggies and use 5 cups of liquid (I used 4 of chicken broth and 1 of water). I also threw in 6 stalks of chopped celery, which I sautéd with the onions a bit. I pressure cooked the whole thing for 13 minutes and it came out a delightful stew consistency. Oh, also threw in salt, Maggi sauce, pepper, and a bunch of extra garlic, and used a can of Trader Joe’s fire roasted tomatoes and peppers instead of just tomatoes. Easy and tasty and the kids liked it even with the chopped kale!
