- 1/2 cup finely chopped onion
- 1/2 cup carrots (diced)
- 2 cloves garlic (finely chopped or pressed)
- 45 oz. crushed tomatoes
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 bay leaf (dried)
- 1/2 tsp. salt
- black pepper (to taste)
- 8 cups chicken broth (I use low-sodium, see note)
- 8 oz. bowtie pasta (rotini or broken lasagna noodles will also work)
- 1 cup ricotta cheese
- 1 cup mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp. dried basil
- 1 pinch salt (and pepper)
