Not sure if I let it cook too long at some point, but it was more of a deconstructed lasagna and not so much a soup. It was delicious but it needed a bit more seasoning than the recipe called for as well as a teaspoon of salt and a pinch of sugar to cut the acidity of the tomatoes. Instead of Italian seasoning, I used 1 tsp each of basil leaves, oregano leaves, marjoram leaves, and thyme leaves, plus a pinch of red pepper flakes.
