This was really good! I capitalized the onion in the beginning and ended up using a bit more cheese and a little cornstarch to thicken it up and to make sure the cheese incorporated well! The potatoes didn't stay together as I would have liked... but the flavor was wonderful! I also hit it with a little garlic powder at the end and a dash of paprika!
Absolutely wonderful and will make again! 4/5stars
UPDATE:
Made Again tonight because i had purchased double ingredients and i got a request to make it again! My onion went bad though so i had to use dried minced... and extra sharp white cheddar! i also sauteed the mushrooms in a bit of butter and evoo! i cut down HP to 6mins instead of 10 to keep potatoes intact! It was even better this time! YUMMM! Would say this is now a 5star this way!
