  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • 1 onion (diced)
  • 1 cup celery (chopped)
  • 3 cloves garlic (minced)
  • 1 package andouille sausage (13.5 oz cut into rounds)
  • 1/3 cup flour
  • 1/3 cup butter
  • 3 cups chicken broth
  • 1 pound chicken (cubed)
  • 2 teaspoons creole seasoning (or to taste, we used Tony Chachere's)
  • 10 ounces diced tomatoes (with green chiles, aka Rotel)
  • 15 ounces fire roasted diced tomatoes
  • 2 bay leaves
  • 1/2 teaspoon kosher salt (or to taste)
  • 1/4 teaspoon black pepper (or to taste)
  • 1 cup okra (sliced)
  • 1 pound shrimp (peeled, deveined)
  • 4 cups cooked rice

    It turned out well but you must be super careful when making the Roux. Don’t cook the roux for 5 minutes cool until it’s becomes smooth and then start adding chicken broth one cup at a time

    Turned out awesome, my co-workers & family loved it!! I didn’t add any chicken & it was still plenty of meat. I only added one can of diced tomatoes & some green chilies. Added the cooked rice in at the end. Yum!

    Very yummy. We really liked the amount of spice.
    Good-needs at least 20 min to get the roux where it needs to be.

    This was seriously sooo yummy!! I like spicy so I added 2 sliced jalapeños! It gets spicier the next 2 days so if you don’t like spicy then don’t add too many! But this will be a remake for sure!! Hubs loooved it too!

    I’m used to a little more spice to it but it was great! Definitely not 35 min if you include chopping everything. Give yourself time! Recommend!

    It turned out fantastic! Made me feel like a pro. I left out the okra and sprinkled in some fele at the end when I added the shrimp. We will be having this again for sure!

    Left out the flour and only had plain diced tomatoes. Good. I might add a little more seasoning next time.
