- 1 goat (neck roast cut up into 1-2 inch pieces, If you can't find goat neck, any cut of goat will do, we have made this recipe with tenderloin.)
- salt (to taste, I like my foods saltier than most so I will leave this up to your discretion)
- black pepper (to taste.)
- 1 tomato (sliced, diced, or chopped to your preference.)
- 2 Tbsp. curry powder (divided)
- 1/4 tsp. cumin
- 1/4 tsp. dried thyme (we use dried thyme from our garden)
- 1/4 cup chopped cilantro

- 1/2 tsp. tomato paste
- 3 Tbsp. oil (your choice, use an oil with a high smoke point)
- 2 onions (sliced, diced, or chopped to your preference, divided Set aside one onion for the salad)
- 3 garlic (or more cloves of)
- 1/2 Scotch Bonnet pepper (Habenero works well *optional*)
- 1 1/2 cups chicken broth
- leaf lettuce (Large, pieces)
