Description
Serve shredded chicken slow cooked with tomatoes, corn and black beans over rice or as a burrito in flour tortillas. Make it a fiesta of flavors by adding toppings such as shredded cheese, sour cream, chopped cilantro or green onions.

- 1 Tbsp. oil
- 2 lb. boneless skinless chicken breasts
- 1/3 cup water
- 2 cans diced tomatoes (14 1/2 ounces each, undrained)
- 15.75 oz. whole kernel corn (drained)
- 15 oz. black beans (drained and rinsed)
- 1 pkg. chicken seasoning mix (slow cookers fiesta)

Directions
- Heat oil in Instant Pot on SAUTÉ function. Place chicken in pot. Cook 5 minutes or until lightly browned, stirring once. Add water. Add tomatoes, corn, black beans and Seasoning Mix. Stir until well blended. Close lid. Set Valve to Seal.
- Set to cook for 30 minutes on MEAT/STEW function or until chicken is cooked through. When done, quick release the pressure. Open the lid once pressure inside the pot is completely released. (Check manufacturer’s manual for safe operating directions.)
- Transfer chicken to large bowl. Shred chicken using 2 forks. Return chicken to Instant Pot; mix well. Serve over cooked rice with assorted toppings such as shredded cheese, sour cream, chopped cilantro or green onions, if desired.
