- 3/4 cup lentils (or a mix of, brown/green lentils and mung beans, soaked in warm hot water for atleast 15 mins)
- 1 tsp. oil (or use water to saute to make oil-free)
- 1/2 onion (chopped)
- 4 cloves garlic (chopped)
- 1 inch ginger (chopped)
- 1/2 hot green chile (0.5 or 1, chopped)
- 1/4 tsp. turmeric
- 1 tsp. Garam Masala
- 1/2 tsp. ground cumin (or ground coriander)
- 15 oz. tomatoes (2 medium tomatoes, chopped)
- 1 cup eggplant (1, heaping chopped, or use other hearty vegetables of choice)
- 1 cup sweet potatoes (cubed)
- 3/4 tsp. salt
- 2 cups water (3 cups for saucepan)
- 1 handful spinach
- cayenne
- lemon
- pepper flakes (for garnish, optional)

Absolutely fantastic. This was my first foray into Indian food, and I'm glad I picked this recipe to start with. I ended up doubling the recipe according to the directions, while being a bit more generous with the vegetables. Perfect amount of spice, as well; nice amount of heat without being overpowering.

It is so Easy and quick to make. Like the flavors. I do add a little more spice and change up with a different chile and it still turns out tasting yummy. This will be my 3rd time making it.

Flavorful, sweet potatoes nicely complimented the other salty veggies. I replaced 1/2 of lentils with quinoa and rice because I was short and still tastey. I love eggplant so I added and extra one.
