- 29 oz. petite diced tomatoes (with juices)
- 1 1/2 lb. boneless, skinless, chicken thighs (or chicken breasts*, I used half thighs and half breasts)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 4 cups cheese tortellini (frozen, or you can use fresh)
- 3 cups spinach (packed, you can also use kale if you prefer)
- 1/2 cup Parmesan cheese
- 1 cup half-and-half (warmed )

This is great! “Someone” ate 1/3 of my bag of tortellini (my daughter’s “snack” 😂) so I used a frozen bag of cheese ravioli instead! I also only had a frozen bag of spinach, so I defrosted it in the microwave, then mixed it in. Will definitely make this again. I love her soup recipes!

AMAZING!!! I have made this recipe multiple times. Once I used sausage in addition to the chicken, sooo good, but not very healthy for you. The whole family eats this, my daughter is anti veggie.

This was delicious! I made it exactly by the recipe except for one thing I had some sun dried tomatoes left over from another recipe so I threw those in. I will definitely be making this again. I think I might do it with Italian sausage next time.

Everyone in the family loves this soup. Super easy and delicious. I used precooked Cornish game hen meat I had in the freezer and just decreased the cooking time. I will make again.
